Grape Variety: 100% Sangiovese.
Tasting Notes: Deep garnet colour with a brownish hue, typical of aged Brunello. Rich, intense bouquet of violets, underbrush and blackberries layered with licorice and balsamic notes. On the palate, it is well structured, elegant, and velvety in texture. This is a fruit-forward vintage bursting with pure blackberry and cherry flavours. Drinking well now and can be cellared and enjoyed for at least another four years and probably longer.
Food Pairing: This is a superb wine for sipping and enjoying on its own. Also excellent with aged cheeses and cold cuts, meaty main dishes, roasted meats and game.
Serving Temperature: 18-20°C is the optimal serving temperature for Brunello. It should be decanted (or at least uncorked) and allowed to "breathe" for a few hours before serving. This will bring out its complex flavours and soften its tannins for ultimate enjoyment.
Origin: Montalcino. The Cerbaia vineyards are located on a northwest-facing slope in close proximity to the hilltop village of Montalcino. Their microclimate is cooler than in the more southern areas of the Montalcino district.
Aging: 4 years in oak barrels, then at least 6 months in the bottle for refinement.
