Grape Variety: 100% Sangiovese.
Tasting Notes: From the unusually warm 2003 Vintage, Dark garnet, turning pale mahogany at the rim. A deep and complex nose with ripe cherry, dried fruits, violets, tar, autumn forest and licorice. The medium bodied palate reveals layers of dried fruits, savoury notes with a round, silky mouth feel and a long, fruit driven finish. Serve with Oven Roasted Pork Tenderloin, with Apple Chutney and Port Jus.

More Food Pairing: This is a "huge" and complex wine, wonderful for sipping and enjoying on its own. Also excellent with aged cheeses and cold cuts, meaty main dishes, roasted meats and game.
Serving Temperature: 18-20°C is the optimal serving temperature for Brunello. It should be decanted (or at least uncorked) and allowed to "breathe" for a few hours before serving. This will bring out its complex flavours and soften its tannins for ultimate enjoyment.
Origin: Montalcino. The Cerbaia vineyards are located on a northwest-facing slope in close proximity to the hilltop village of Montalcino. Their microclimate is cooler than in the more southern areas of the Montalcino district.
Aging: 4 years in oak barrels, then at least 6 months in the bottle for refinement.
