Grape Varieties: Corvina, Corvinone, Rondinella and Molinara
Origin: Valgatara, in the traditional Valpolicella Classico region
Special process: Rested in oak casks with the pomace of Amarone.
Ageing: 1 to 2 years in oak barrels.
Alcohol: 13.5% - 14%.
Tasting Notes: Garnet colour with purple hues. Complex nose of wild strawberry, black cherry, and spices. Rich and velvety-smooth flavour and a long, harmonious finish.
Food Pairing: Serve with steak, grilled, braised or roasted red meats, game, hearty stews, and medium aged cheeses.
Serving Temperature: 18°-20° C. It is important to allow a Ripasso to reach a comfortable room temperature before serving (i.e. don't serve it at a lower temperature) in order to fully bring out its smoothness and complex flavours.
